Low Carb Poundcake Recipe With Lemon and Blueberries

I personally love baking with blueberries! I pick lots of them in the summer and then stock my freezer with them.

When I do have a big batch, I always make blueberry syrup to use on pancakes, waffles, or mix into plain yogurt. But I wanted to try something new.

While looking for a recipe, I stumbled upon a few lemon blueberry pound cake recipes. That gave me the idea to use an old pound cake recipe I use for strawberry shortcake and adapt it to use blueberries!

Ingredients Needed For Low-Carb Pound Cake

All of the exact ingredient amounts are in the printable recipe card at the bottom of this post. First, I'm going to share some information about what I used to make this gluten-free pound cake.

Butter

The first thing you'll need is 2 sticks of butter. Let it sit at room temperature and soften so it's easier to cream. You'll mix it together with cream cheese and low-carb sugar substitute.

Eggs

This cake takes 10 eggs, so make sure you have enough!

Flavoring

To flavor it, I used both lemon extract and vanilla extract.

Flour

For the flour, I used a combination of almond and coconut flour. I think this makes the cake firm and not too dry at the same time.

Blueberries

I also used 2 cups of frozen blueberries, but you can use fresh ones too.

Glaze

For the glaze, I combined Swerve confectioner's powdered sweetener with lemon juice. The result is really tasty!

Please note:Check out the recipe card at the bottom for a full list of ingredients used to make this low carb recipe.

Quick Tips:

  • Let the cake cool before you add the glaze. This is really important if you want the glaze to be thicker on the cake.
  • Make sure you grease the tube or bundt pan really well. I used a silicone bundt pan and didn't have to grease it much.

How To Make Lemon Blueberry Pound Cake

This is the perfect recipe to make when you need to use up some frozen blueberries. This recipe tastes perfect with fresh blueberries that you pick in the summer or even frozen ones.

This is a very simple recipe. All the instructions are in the printable recipe card at the bottom of this post.

Make A Creamy Base

First, cream together the butter, cream cheese, and sweetener. Then, add all the eggs and extracts. Set that aside.

Combine Dry Ingredients

In another bowl, combine the almond flour, coconut flour, and baking powder.

Mix Everything Together

Slowly add this flour mixture to the egg mixture. When this is well-combined, set it aside.

Mix In The Blueberries

Coat the blueberries in coconut flour. Then, stir them into the batter.

I ended up doubling the ingredients for the pound cake and added two cups of blueberries.

Bake The Pound Cake

The next thing you'll do is pour the batter into a greased tube or silicone bundt pan. Bake it for about an hour and 25 minutes or until a toothpick inserted near the center comes out clean.

Doubling the original pound cake recipe was the perfect amount for the bundt pan. And, the low carb lemon blueberry pound cake released from the ungreased pan with ease! I was very happy about that. I've had trouble with low carb cakes sticking to regular metal pans so I've invested in several silicone ones.

FAQs

Why is my pound cake heavy? ›

Overmixing and its consequences

You see, pound cake is already a naturally dense bake if you don't over-mix the batter, but if you do end up over-mixing it, you are going to make one heavy brick of a cake that doesn't have an appealing texture (via Southern Living).

What is pound cake made of? ›

Pound cake is a type of cake traditionally made with a pound of each of four ingredients: flour, butter, eggs, and sugar. Pound cakes are generally baked in either a loaf pan or a Bundt mold. They are sometimes served either dusted with powdered sugar, lightly glazed, or with a coat of icing.

How do you cool a pound cake? ›

After removing it from the oven, place the pound cake, right side up, in the pan on a wire rack, and let it cool for 10 minutes away from drafts. This cool time allows the cake to become firm enough to remove from the pan without breaking apart.

Does pound cake rise a lot? ›

When you bake your pound cake, you'll notice it does rise in the oven. As everything heats up, it expands. It may fall a little bit as it cools, but it shouldn't completely cave in. If this happens to you, it's probably because you didn't bake it quite long enough.

What does adding an extra egg do to a cake mix? ›

Add an Extra Egg

Most cake mixes call for two to three eggs. Just one more egg will add extra moisture, fat, and a little protein, which means the cake will be softer and less likely to overbake and dry out in the oven.

Is it better to bake pound cake at 325 or 350? ›

A steady 325-350 degrees is ideal when it comes to baking pound cake. Position the pan in the middle of the oven, and rotate it once, halfway through the baking time, as it bakes to account for any hot spots.

Which flour is better for cakes? ›

Since its gluten proteins are very weak, cake flour is often used to make soft, tender baked goods like cakes, pastries, or biscuits. A chlorination process further breaks down cake flour's gluten, creating a flour that's even more delicate. All-purpose flour is made from a mixture of hard and soft wheat.

Can I use regular flour instead of cake flour? ›

Can I substitute all-purpose flour for cake flour? Yes, you can. You'll wind up with a similar cake, just with a slight difference in texture and crumb. Both flours perform the same in recipes — they'll mix into identical batters — but the final results will differ to a small degree.

Can I use cake flour instead of all-purpose flour for pound cake? ›

Yes, you can. Cake flour is lighter, and has less gluten than all purpose flour. You might prefer the lighter fluffier pound cake. If you are making a yeast bread, or any kneaded bread or noodle, you will likely want the all purpose flour.

What is the best pan to bake a pound cake in? ›

Bundt pans are a baking essential. Their unique construction allows an even browning on denser cakes, like pound cake, with the well-defined curves that are the hallmark of the form. Bundts now come in the shape of rosettes, castles, and even pine forests.

Why did my pound cake turn brown inside? ›

Either you filled the cake pan too much and didn't bake the cake long enough. Or your oven needs a new heating element.

Why is my lemon pound cake dry? ›

A dry cake is usually the result of one of the following pitfalls: using the wrong ingredients, making mistakes while measuring or mixing the batter, or baking the cake too long or at too high a temperature.

Why is pound cake so unhealthy? ›

On average, the pound-cake servings contained 31 grams of fat, a little less than half the 65 grams of fat one should consume on a 2,000-calorie-a-day diet that derives 30 percent of its calories from fat. Granted, not a low-fat treat.

What is wrong with my pound cake? ›

Pound cake is SUPPOSED to be a little dense. But it's not supposed to feel heavy or dry. If it's dry, the cake may have been over-baked. Pound cake can also be too dry if you added too much flour (or not enough butter or sugar).

Should you sift flour for a pound cake? ›

Sift: Sifting the flour into the batter makes the cake lighter. It also breaks up any large clumps of flour, making it easier to incorporate into the batter.

Is a pound cake supposed to be heavy? ›

It's a heavy cake (as pound cakes should be!) with a dense, velvety crumb, but there's nothing dry or crumbly about it. While this cake can hold it's own, it's even better when served with homemade whipped cream and fresh fruit.

How can pound cakes be made lighter and smoother? ›

Acidity weakens gluten and makes a softer cake crumb. What makes pound cake so heavy? The traditional pound cake recipe made with equal proportions of butter, sugar, flour and eggs can tend to be heavy. A little baking powder can be added to lighten the crumb.

Can you overbeat a pound cake? ›

Be careful not to overbeat the butter-sugar mixture, especially on a hot day — you could rupture the air cells and cause the batter to be heavy.

What happens when you overbeat a pound cake? ›

The reason why you shouldn't overbeat the eggs for pound cake is that it makes the cake crumbly. First, the overmixed eggs give you trouble because it makes a mess in your oven; the batter oozes out of the baking dish. Then, once you cut into the baked cake, the weakened structure doesn't hold up as it should.
