Easy Vegan Chili Ingredients

Here’s what you’ll need to make this easy vegan chili:

  1. Onion, garlic and bell peppers. Onion, garlic and bell peppers make the veggie base of the recipe. You can use white or yellow onion and any colour of bell pepper.
  2. Beans. I used 1 can of kidney beans and 1 can of pinto beans but black beans, white beans and small red beans also work well.
  3. Canned diced tomatoes. I love the Fire Roasted Diced Tomatoes from Muir Glen but any kind works. You’ll need 1 large 28 oz can.
  4. Vegetable broth. You’ll need up to 2 cups of veggie broth and you can use homemade, carton or bouillon cubes or powder.
  5. Cocoa powder. Ever added cocoa powder to chili? Sounds a little strange but it adds a lovely depth of flavour. You’ll need just 1 tsp and it’s optional so if you don’t have any on hand, no worries.
  6. Spices. To season the chili, you will need mild chili powder, oregano and cumin.

Description

This easy vegan chili is ready in just 30-minutes making it perfect for a hearty, healthy weeknight meal.

Ingredients

  • 1 white or yellow onion, approx. 2 cups
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tbsp mild chili powder
  • 1 tbsp dried oregano
  • 2 tsp ground cumin
  • 1/2 tsp red pepper flakes, optional, for spicy chili
  • 1 15 oz can kidney beans, drained and rinsed (1.5 cups, see notes)
  • 1 15 oz can pinto beans, drained and rinsed (1.5 cups)
  • 1 28 oz can diced tomatoes, with the juices
  • 1.5 cups vegetable broth
  • 1 tsp cocoa powder
  • 1/2 tsp pepper
  • sea salt to taste, if needed

Instructions

  1. Add the onion, bell peppers and garlic to a large soup pot with 1-2 tbsp of water or vegetable broth.
  2. Cook over medium heat for 5-6 minutes.
  3. Add the chili powder, oregano and cumin, stir to combine and cook for a couple more minutes. If the pot starts to dry out, add a splash of water.
  4. Add the rest of the ingredients and simmer lightly for 15 minutes.
  5. Optional: using an immersion blender in the pot, pulse the chili a few times to blend just a bit of it and create some texture and thickness – or add a big scoop to a blender, pulse a few times then pour back into the pot.
  6. Turn off the heat and let the chili sit for 5 minutes to thicken a little. It will continue to thicken in the fridge.
  7. Serve right away with your favourite chili toppings. Leftovers can be stored in the fridge for up to 5 days or frozen for up to 2 months.

Notes

Use any combination of beans up to 3 cups total. Black beans, white beans, chickpeas, small red beans and black-eyed peas all work well.

Should chili be thick or soupy? ›

Chili should be thick and hearty enough to be a meal on its own, but sometimes there's just a bit more liquid than you want in the pot. While you can simply keep simmering the chili, that method risks overcooking softer ingredients like the beans, losing all your nice texture to mushy monotony.

Does tomato paste make chili thicker? ›

Not only will tomato paste add a tangy flavor to the dish, but it will also act as a thickening agent. For this purpose, you can use homemade or store-bought tomato paste. Add 1 can of the paste to your pot of chili, stir the mixture, and let it cook on medium heat for about 30 minutes.

Does chili need cornstarch? ›

All-purpose flour and cornstarch are useful for thickening chili, as well as sauces, soups, and stews. However, you'll want to avoid adding these ingredients directly to your recipe, as this will result in clumps. Instead, create a slurry and add it slowly to help the thickener fully incorporate.

What is the secret to really good chili? ›

Only Add Flavorful Liquids

Instead of adding water to your chili, add some more flavor with chicken or beef broth, red wine vinegar, Worcestershire sauce, or even beet or wine. Each one of these options brings out different notes and levels of sweetness that will enhance your culinary creation.

What secret ingredient will deepen the flavor of your chili? ›

Stir some puréed pumpkin into your chili just after sautéing your aromatics (onions, garlic, etc...) and before adding any liquid. This will deepen and sweeten its flavor, making it a great balance for all the chile peppers and heat.

When to add beans to chili? ›

You know the saying, “save the best for last?” To keep your beans nice and plump, add them about 20 minutes before you finish cooking. This will give them plenty of time to impart that perfectly seasoned chili flavor to your recipe without overcooking.

Why is my chili runny? ›

Is your chili too thin? Add more beans! Pinto beans, black beans, and kidney beans all release natural starches when they break down. You can also mash beans in a separate bowl with a potato masher to thicken as well.

Why put masa in chili? ›

Added to the chili near the end of cooking, masa harina thickens the liquid slightly, giving it body, and imparts a subtle corn flavor. Grind the meat yourself or ask the butcher to grind it fresh for chili, using the large holes of a meat grinder to give it a coarse texture.

How to thicken vegan chili? ›

Just start with a tablespoon of the flour, cornmeal, masa harina, or cornstarch whisked with a little water, add to your chili and simmer 10 more minutes or so. If it isn't as thick as you'd like, repeat and simmer 10 more minutes.

What adds depth to chili? ›

Brown Your Meat First

To enhance the flavor of your chili, brown the meat before adding it to the pot. This step not only caramelizes the meat, but gives your chili more texture, adding a depth that cannot be achieved by simply simmering it in the chili.

What is the liquid in chili? ›

Flavorful liquids are essential to create a rich and delicious broth for your chili. While something as basic as water will get the job done, broth is a quick and simple way to give chili an extra-savory flavor, and canned tomatoes can add a layer of sweetness.

How to make chili more soupy? ›

Add more water or tomato sauce if it's too thick. Keeping the lid on can keep the steam in resulting in thinner chili. Also, if I cook chili in the crock pot it is usually thinner, as the lid collects the steam rather than it evaporating.

How much xanthan gum to thicken chili? ›

Using Xanthan Gum as a Thickening Agent

Generally, for thin sauces, a ratio of 0.1% to 0.3% works best. For thicker sauces, a ratio of 0.3% to 1% is commonly used. The more xanthan gum powder added, the thicker your sauce will be.

Does heavy cream thicken chili? ›

Another great thickening agent is dairy, whether heavy cream, milk, sour cream, or even shredded cheese. You'll want to incorporate these ingredients on low heat. With the heavy cream or milk, you'll add that to your whole pot of chili before serving.
